HISTORY
Four centuries of passion for Wine & Spirits.
Bottega has a history of four centuries in the world of wine and grappa. Since the 17th century, when our ancestors cultivated the vine as tenant farmers, up to now, with Bottega grappa and liquors being appreciated all over the world.

Amarone DOCG

The grapes are manually harvested in cases and taken directly in the drying room where, at a controlled temperature and ventilation they are left withering from the end of October until the first days of march, so that the grapes can eliminate most of their water of constitution. Fermentation occurs at a temperature of 18° C with daily pump-overs so to obtain a very alcoholic and structured wine, which is also rich in extract. It is then left ageing in small oak casks for a period of two years.

The Rainbow Collection, An innovative project whose primary objective is to create a collection of colors suitable for celebrating the most significant holidays of the year. ACCADEMIA (6 bottles of different colors) are inspired by these colourful art expressions which have become synonymous with Italian innovation and craftsmanship. Bottega is a top quality Prosecco from Valdobbiadene; it is produced solely from DOCG quality grapes with no reserve wine being used in its production to maximise freshness on the palate.

Bunello di Montalcino

The red grapes are hand picked, de-stemmed and then fermented with maceration for about three weeks in stainless steel tanks thermo conditioned at 28°-30°C. After the alcoholic fermentation proceeds to the fermentation that allows to obtain a wine that is soft and balanced, more persistent, more full-bodied with finer aromas. The aging provides at least a minimum period of 2 years in oak casks and 4 months in bottle. Brunello must be put on the market, accordingly to the current regulations, after the fifth year after the harvest.

Sauvignon Igt Delle Venezie Bottega
The grapes are harvested manually. The must obtained from the soft pressing is left in contact with the skins for a short period. The resulting juice is rich in flavor and is fermented in temperature-controlled stainless steel tanks. The wine remains in contact with the lees for 4 months in stainless steel tanks, in the absence of oxygen to preserve the aromas.

Pinot Grigio Rosé Igt Delle Venezie Bottega
The harvest is slightly delayed, to assure a physiological ripeness of the grapes. They are hand picked in cases and vinified after a cold maceration that lasts 36 hours. This procedure, longer than the traditional one, grants a more intense color to the wine. Fermentation goes on for 8-10 days, while stabilization is carried out in 30 days. The wine is then filtered and bottled.

Pinot Grigio Igt Delle Venezie Bottega
The harvest is slightly delayed, to assure a physiological ripeness of the grapes. They are hand picked in cases and vinified in white (must and skins are immediately separated) after a cold maceration that lasts 36 hours. This procedure, longer than the traditional one, grants a more intense color to the wine. Fermentation goes on for 8-10 days, while stabilization is carried out in 30 days. The wine is then filtered and bottled.
