PRODUCT NOTE

Vineyard: The vineyards for this premium Muscadet are laid entirely to a granitic mix of soil (granodiorite, biotite and hornblende). Covering a very small area of gently sloping, South West facing hills in the heart of the Muscadet district. The highly decomposed granite provides excellent natural drainage and an excellent environment for the vine rooting system. The vines are over 65 years old and are low yielding, producing between 25 to 40 hl/ha maximum. 7000 vines per hectare are planted and grapes are hand harvested.

Vinification: Grapes are double sorted in the vineyard and winery before being whole bunch pressed using a pneumatic press. Wild yeasts were used for fermentation which lasted for 20 days at 18°C in large cement tanks. After fermentation the wine is aged on its fine lees for a minimum of 4 years with no racking or battonage. The wine is bottled without any fining or filtering, making it suitable for vegetaran and vegan consumption. Residual sugar 2.5g/l, acidity 4.4g/l, pH3.3.

TASTING NOTE

generous, fruity Muscadet with flavours of honey and quince and a fine perfume of dried fruit and brioche.

Pairing

It pairs wonderfully well with fish, and is an excellent apéritif, served cool, with small salmon canapés.The ideal temperature for serving it is around 12°C.
