PRODUCT NOTES

  • Tasting Note: Full-bodied, complex, dry, balanced acidity, strong oak impression, fairly tannic. A dark ruby colour with aromas of black pepper, blackberry, cassis, coffee, floral, smoky, tobacco and vanilla, which carry through to the palate.
  • Food Matching: Grilled lamb kebabs with cumin and cinnamon; grilled sirloin steak with anise basil butter or Vietnamese-style grilled pork steak with noodles.
  • Vinification: In the early 1800s the grandfather Giuseppe Rivetti, whose nickname was Pin, emigrated to Argentina from Neive. Once he returned in Piedmont he founded the family winery and brought his children up in Castagnole Lanze to be dedicated and expert winegrowers. The grapes are harvested and vinified in the first week of October. Maceration and fermentation lasts 7-8 days in temperature controlled horizontal tanks. Malolactic and fining take place in new French barriques, for approximately 20-22 months. During this period racking tales place several times to clarify the wine. After the refining period the wine is placed in steel tanks for 3 months and then bottled. Fining and filtration is not carried out. The wine is then allowed to settle in the bottle for a period of 12 months prior to release.
