Langhe Nebbiolo Doc San Giacomo Ascheri 2019
- Tasting Note: Nebbiolo, the grape that makes Barolo and Barbaresco such heady delights, is still delightful when grown elsewhere in Piedmont; this velvety wine emits scents of violet and rose and then scatters their petals across the tongue.
- Food Matching: Excellent with “Haute Cuisine” dishes with red and white sauces. Delicious with fondue.
- Vineyard: We have created our vineyards focusing the attention on the most suitable selections in order to express the highest potential of each grape and of each place. The vines are trained with the traditional Guyot simple system and the grapes are all picked by hand before being transported to the winery as quickly as possible.Our vineyards are managed according to the principles of sustainable agriculture.
- Vinification: Harvest time: 13th/17th October 2014. Fermentation: 10 days at 28°C in stainless steel vats with control of temperature and with 6 pumpings over per day. The wine stays in stainless steel for three months, six months in old oak (28 hl Slavonian oak casks) and three more months in stailess steel. The wine was bottles one year after fermentation, in november 2016.
