The vineyards are managed by Dr John Possingham, former research scientist with the CSIRO (Austrailia’s national science research agency). Located at 300 metres asl these rolling hills are influenced by ocean breezes. Only 15000 bottles are produced a year with a low yield 25hl/ha.
Farming in an organic way with use of drip irrigation and no fertilisers or chemicals. Single wire trellised vines with an excellent leaf management system. Hand harvest at night to retain freshness. Sorting tables used. Temperature controlled stainless steel tanks for fermentation. Aged for 18 months in new and old French Oak and bottle matured.

Blackberry fruits with hints of anise, nutmeg and cedar
Layers of plum and black fruit aromas, sweet spice and chocolate/mocha overtones. Velvety tannins and balanced acidity
