Aromas of honey and honeysuckle can be found on the nose, on the palate it is light, dry and crisp, with well balanced acidity and a long lingering finish of quince, melon and honeydew. Best drunk young.
Food Matching: Duck breasts with orange, honey and tea sauce, chicken liver pate with figs and walnuts or grilled lobster with creamy chilli vinaigrette.
Vinification: Beginning with the 1997 vintage, we also separately fermented and bottled a number of small batches from specific areas, called lieux-dits (named places) which have their own historical identity. After bottling, all our wines are left to mature for a few months or a few years in our underground cellars.
