Scilly Spirits Scilly Atlantic Strength Gin
Production Method: Base is Grain Neutral Spirit and botanicals are Juniper, Fennel seeds, Kaffir Lime Leaves, Dried orange peel, Pink peppercorns, Cassia bark and Cardamom. Pot Still distillaton is through the stainless steal 500ltr and 100ltr Stills. The gin is rested in stainless steal holding tanks for a minimum of 4 weeks post distillation prior to filtration and bottling, all of which is carried out within the distillery building by the founding husband and wife.
Nose of juniper with savoury herbal notes of dill, fennel and cedar wood. Palate is fresh mint and fennel with spicy warmth of cardamom and pepper. Long dry finish.
